Not only is this pie to die for but it contains one of the healthiest fruits out there; blueberries. Follow these steps to make blueberry pie.
For the blueberry pie filling, you will need ½ cup of sugar, ¼ cup of all-purpose flour, ¼ teaspoon ground cinnamon, 2 tablespoons unsalted butter, 2 tablespoons fresh squeezed lemon juice, and 3 pints of cleaned blueberries.
Add the lemon juice, sugar, cinnamon, flour, and blueberries to a bowl and mix well.
Add the blueberry filling to the pie crust and top the pie with a top crust. Crimp the sides of the pie together to seal the filling.
Place the pie in the fridge for 25 minutes. The filling should be firm.
Mix together an egg and tablespoon of milk. Brush this mixture on the top of the pie and then cut 4 slits into the pie. The slits help decorate the pie and help release steam when cooking.
Bake your blueberry pie at 425 degrees F for 20 minutes and then reduce the heat to 350 degrees and continue to bake for about 35 minutes. The juices should be bubbling.
Let the pie cool down for a little while, then serve, and enjoy!
You can use a homemade crust or buy pre-made ones from your grocery store.
The blueberry pie will be super hot when removing it from the oven; use oven mitts and let it cool for a good amount of time before eating.
